QUINOA PORRIDGE

Serves 2

Ingredients

1 cup quinoa

¼ tsp ground cinnamon

1 ½ cups almond milk or unsweetened coconut milk

½ cup water

2 tsp nutmeg

1 tsp vanilla extract

1 pinch sea salt (finely ground)

 

Directions

Heat a saucepan over medium heat and measure in quinoa.  Season with cinnamon and nutmeg and cook until toasted, stirring frequently, about 3 minutes.  Pour in almond milk, water and vanilla and stir in the salt.  Bring to a boil, then cook over low het until porridge is thick and grains are tender, about 25 minutes.  Stir occasionally, to prevent burning.  Add fresh berries to top for extra flavor
