GRILLED ZUCCHINI HUMMUS

Ingredients:

¼ cup; 45 calories; 30 calories from fat(67 percent of total calories); 3.5 g fat (0 g saturated; 0 g trans fats); 0 mg cholesterol; 3 g carbohydrate; 1 g sugar; 1 g fiber; 2 g protein; 110 mg sodium.

1 large zucchini (about 1 pound)

¼ cup roasted tahini

2 cloves garlic

1 tablespoon grape seed oil

1 tablespoon lemon juice

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon kosher sea salt

Directions:

Heat grill (griddle) to high. Trim ends of zucchini, then slice into thin slices.  If the seeds are large and moist spoon them out.  If they are small and dry keep.  Place the zucchini on the grill, and cover with oil.  Cook until lightly browned and starting to get tender.  Set aside to cool.

When the zucchini has cooled enough to handle, place it in a food processor or blender.  Add the tahini, garlic, lemon juice, cumin, paprika and salt.  Process for 1 minute or until very smooth.  

The hummus can be served immediately or chilled.  The hummus will thicken as it chills.  Makes about 2 ½ cups.
